1、 糖果制品培訓(xùn)教材 第一章 樣品的采集 任何樣品分析都是通過(guò)樣品來(lái)進(jìn)行的,樣品是檢驗(yàn)和評(píng)價(jià)被檢對(duì)象質(zhì)量狀況的最直接的依據(jù),樣品的代表性如何。直接關(guān)系到分析結(jié)果的準(zhǔn)確性、真實(shí)性、。如果樣品的代表性不夠,即使儀器設(shè)備再先進(jìn),再精確,檢驗(yàn)分析再認(rèn)真,結(jié)果再準(zhǔn)確,也不能正確反映產(chǎn)品的真實(shí)質(zhì)量狀況,從而使整個(gè)檢驗(yàn)分析工作失去意義。 樣品的采集就是從檢驗(yàn)對(duì)象的批量中取出用于分析的一部分樣品,簡(jiǎn)稱(chēng)為采樣,也叫取樣,采樣是整個(gè)分析工作的第一步,也是最關(guān)鍵的一步。 采樣就是從被檢對(duì)象的批量中取出一部分具有代表性的樣品中。采樣的關(guān)鍵在于根據(jù)被 檢對(duì)象的類(lèi)別、批量采用適當(dāng)?shù)姆椒ㄈ〉闷溆凶畲笙薅却硇缘臉悠贰>吞枪?/p>

2、言,樣品抽取數(shù)量按下表抽取每批生產(chǎn)包裝件數(shù)(指基本包裝箱)抽樣件數(shù)(指基本包裝箱)200(含200以下)32018004801180051801320063200以上7在抽樣件數(shù)中任意取3件,每件取約100g,混勻,從其中取1/3用于感官檢驗(yàn),1/3用于凈含量檢驗(yàn),1/3用于微生物及理化指標(biāo)檢驗(yàn)。第二章 糖果的分類(lèi)及相關(guān)定義一. 產(chǎn)品簡(jiǎn)介:糖果是以白砂糖、淀粉糖漿(或其他食糖)或允許使用的甜味劑為主要原料制成的固態(tài)或半固態(tài)甜味食品。二產(chǎn)品分類(lèi):(一) 硬質(zhì)糖果(即口感硬、脆的糖果)包括:(1)砂糖、淀粉糖漿型硬質(zhì)糖果(以白砂糖和淀粉糖漿為主料制成的硬質(zhì)糖果。按口味分有水果味、清涼味、奶油味等品

3、種)。(2)砂糖型硬質(zhì)糖果(以白砂糖為主料制成的硬質(zhì)糖果。按口味分有水果味、草藥味、果仁味等品種)。(3)淀粉糖漿型硬質(zhì)糖果(以淀粉糖漿為主料制成的硬質(zhì)糖果。按口味分有水果味、清涼味、咖啡味等品種);(4)其他型糖果(以其他食糖或甜味劑為主料制成的硬質(zhì)糖果)(二) 硬質(zhì)夾心糖果類(lèi)(皮脆有餡心的糖果)包括:(1)酥心型硬質(zhì)夾心糖果(皮脆餡心酥的硬質(zhì)夾心糖果);(2)粉心型硬 質(zhì)夾心糖果(餡心呈粉狀的硬質(zhì)夾心糖果)。(3)醬心型硬夾心糖果(餡心呈醬狀或凍狀的硬質(zhì)夾心糖果);(4)果心型硬質(zhì)夾心糖果(以果仁或蜜餞等作餡心的硬質(zhì)夾心糖果);(5)漿心型硬質(zhì)夾心糖果(以糖漿做餡心的硬質(zhì)夾心糖果)(三)

4、乳脂糖果類(lèi):焦香糖果類(lèi)。太妃糖類(lèi)以白砂糖、淀粉糖漿(或其他食糖)、油脂和乳制品為 主料制成的,蛋白質(zhì)不低于1.5%,脂肪不低于3.0%,具有特殊乳脂香味和焦香味的糖果包括:(1)膠質(zhì)糖果型乳脂糖果(有較強(qiáng)韌性,咀嚼感細(xì)膩潤(rùn)滑的乳脂糖果);(2)砂質(zhì)型乳脂糖果(糖體有部分微晶體,口感細(xì)膩,軟硬適中的乳脂糖果);(3)夾心型乳脂糖果(糖體內(nèi)有巧克力、果仁醬或果仁粉的乳脂糖果)。(四) 凝膠糖果以食用膠(或淀粉)、白砂糖和淀粉糖漿(或其他食糖)為主料制成的質(zhì)地柔軟的糖果包括:(1)植物膠型凝膠糖果(用植物膠制成的稍透明、有彈性的凝膠糖果);(2)動(dòng)物膠型凝膠糖果(用動(dòng)物膠制成的半透明、有彈性的凝膠糖

5、果);(3)淀粉型凝膠糖果(用淀粉或變性淀粉制成的半透明、有咀嚼性的凝膠糖果);(4)混合膠型凝膠糖果(用兩種或多種食用膠(或淀粉)制成的稍透明、有彈性的凝膠糖果)(五) 拋光糖果(表面光亮堅(jiān)實(shí)的糖果)包括:(1)糖心型拋光糖果(用食糖制成的有顆粒狀糖心的拋光糖果);(2)其他型拋光糖果(用非食糖制成的有顆粒狀糖心的拋光糖果)(六) 膠基糖果類(lèi)用白砂糖(或甜味劑)和膠基物質(zhì)為主料制成的可咀嚼或可吹泡的糖果包括:(1)咀嚼型膠基糖果、口香糖(可咀嚼的膠基糖果):固態(tài)咀嚼膠基糖果(糖體呈半固態(tài),可咀嚼的膠基糖果)、半固態(tài)咀嚼型膠基糖果(糖體呈半固態(tài),可咀嚼的膠基糖果)、夾心咀嚼型膠基糖果(糖體呈固

6、態(tài),有夾心、可咀嚼的膠基糖果);(2)吹泡型膠基糖果、泡泡糖(可吹泡的膠基糖果):固態(tài)吹泡型膠基糖果(糖體呈固態(tài),可吹泡的膠基糖果)、半固態(tài)吹泡型膠基糖果(糖體呈半固態(tài),可吹泡的膠基糖果);夾心吹泡型膠基糖果(糖體呈固態(tài),有夾心,可吹泡的膠基糖果)(七) 充氣糖果類(lèi)(糖體內(nèi)部有細(xì)密、均勻氣泡的糖果)包括:(1)高度充氣糖果(呈海綿狀的彈性或脆性充氣糖果):高度充氣彈性糖果(呈海綿狀有彈性的充氣糖果)、高度充氣脆性糖果(呈海綿狀有脆性的充氣糖果);(2)中度充氣型糖果(組織細(xì)密略有彈性的充氣糖果):中度充氣膠質(zhì)糖果(糖體氣孔較細(xì)密,略有彈性的充氣糖果)、中度充氣砂質(zhì)型糖果(糖體內(nèi)有均勻微晶體的充

7、氣糖果);(3)低度充氣型糖果(組織緊密有咀嚼性的充氣糖果)低度充氣膠質(zhì)糖果(糖體氣孔細(xì)密,富有彈性的充氣糖果)、低度充氣砂質(zhì)型糖果(糖 體內(nèi)均勻微晶體的充氣糖果)、低度充氣混合型糖果(糖體氣孔細(xì)密,含有果料碎粒的充氣糖果。(八) 壓片糖果(經(jīng)造粒、黏合、壓制成型的糖果)包括:堅(jiān)果型(無(wú)心型壓片糖果(糖體無(wú)夾心的壓片糖果);夾心型壓片糖果(糖體有夾心的壓片糖果)(九) 其他糖果類(lèi)(上述未包括的類(lèi)型 )第三章 檢驗(yàn)的一般程序及注意事項(xiàng) 一.樣品的采集:任何檢驗(yàn)掃析都是通過(guò)樣品來(lái)進(jìn)行的。樣品是檢驗(yàn)和評(píng)價(jià)被檢對(duì)象質(zhì)量狀況的最直接的依據(jù)。樣品的代表性直接關(guān)系到分析結(jié)果的準(zhǔn)確性。如果樣品的代表性不夠,即

8、使使檢驗(yàn)分析再認(rèn)真結(jié)果再準(zhǔn)確,也不能反映產(chǎn)品的真實(shí)質(zhì)量狀況。采樣的關(guān)鍵在于從批量中取出一部分具有代表性的樣品,樣品從庫(kù)房到進(jìn)入檢驗(yàn)室進(jìn)行檢驗(yàn),在系列的過(guò)程中,應(yīng)保持樣品的最初狀態(tài)。尤其需進(jìn)行微生物檢測(cè)的樣品在采集時(shí)更應(yīng)保證樣品的原始性。二.對(duì)樣品進(jìn)行檢驗(yàn)時(shí)要嚴(yán)格按照標(biāo)準(zhǔn)規(guī)定的檢驗(yàn)方法進(jìn)行檢驗(yàn)。三.檢驗(yàn)所得的每組數(shù)據(jù),都要進(jìn)行平行實(shí)驗(yàn)。并且相對(duì)誤差應(yīng)滿(mǎn)足標(biāo)準(zhǔn)要求四.檢驗(yàn)所得到數(shù)據(jù)。不能直接套入公式計(jì)算,應(yīng)進(jìn)行數(shù)值處理后,方能進(jìn)行計(jì)算。五.要保持原始記錄的原始性,不能重新抄寫(xiě)整理。六.原始記錄中包括的內(nèi)容:檢驗(yàn)依據(jù)環(huán)境條件所用儀器設(shè)備名稱(chēng)等等。第四章 出廠(chǎng)檢驗(yàn)所需檢驗(yàn)設(shè)備及相關(guān)標(biāo)準(zhǔn)一.出廠(chǎng)檢驗(yàn)必備

10、項(xiàng)目檢驗(yàn)標(biāo)準(zhǔn)感官SB10018-2001凈含量SB10018-2001干燥失重GB/T5009.3-2003還原糖GB/T5009.7-2003第二法菌落總數(shù)GB/T4789.2-2003第五章 糖果出廠(chǎng)檢驗(yàn)糖果出廠(chǎng)檢驗(yàn)的質(zhì)量指標(biāo)可分為三部分:一.感官指標(biāo);二.凈含量指標(biāo);三、理化指標(biāo) 四.微生物指標(biāo)。第一節(jié) 感官檢驗(yàn) 感官檢驗(yàn)主要包括樣品的外形、色澤、形態(tài)、組織、口感、滋味、氣味等,這項(xiàng)檢驗(yàn)主要是依靠人的感覺(jué)器官感知食品的特性,所以應(yīng)注意以下幾點(diǎn):1. 感官檢驗(yàn)場(chǎng)所必須空氣清新,無(wú)煙味、臭味、香味、霉味和陳宿味。2. 感官檢驗(yàn)宜在散射光下進(jìn)行,而不宜有直射陽(yáng)光下或燈光下進(jìn)行必須在燈光下檢測(cè)時(shí)

11、必須用日光燈。3. 檢驗(yàn)場(chǎng)所必須安靜,不喧鬧,以免分散檢驗(yàn)者的注意力,檢驗(yàn)場(chǎng)所不宜有耀眼的顏色。4. 檢驗(yàn)人員要有健康的感覺(jué)器官,要注意積累實(shí)踐經(jīng)驗(yàn),準(zhǔn)確掌握和描述正常樣品的感官性狀。5. 味覺(jué)檢驗(yàn)取最好在飯前1h或2h進(jìn)行,檢驗(yàn)前不吸煙。不吃糖和有刺激的食物,檢驗(yàn)時(shí)先用溫水漱口。6. 一個(gè)樣品的嗅覺(jué)和味覺(jué)檢驗(yàn)完后,要稍休息并漱口,幾個(gè)樣品的應(yīng)按氣味,滋味強(qiáng)度從輕到重的順序進(jìn)行,以防造成錯(cuò)覺(jué)。7. 檢驗(yàn)時(shí)間不宜過(guò)長(zhǎng),以防感官疲勞。8. 具體測(cè)定方法:將樣品置于清潔、干燥的白瓷盤(pán)中,剝?nèi)ニ邪b紙,檢查色澤、形態(tài)、組織、滋味氣味和雜質(zhì)。8結(jié)果表達(dá):“符合”或“不符合”。若不符合要做具體說(shuō)明。 第

12、二節(jié) 凈含量的測(cè)定 凈含量是指去除包裝容器和其他包裝材料后內(nèi)裝物的實(shí)際質(zhì)量或體積,即內(nèi)容物的量。檢驗(yàn)時(shí),不論產(chǎn)品的包裝材料,還是與該產(chǎn)品包裝在一起的其他材料,均不計(jì)入凈含量,糖果凈含量應(yīng)符合產(chǎn)品標(biāo)簽明示值、相應(yīng)產(chǎn)品標(biāo)準(zhǔn)以及定量包裝商品計(jì)量監(jiān)督規(guī)定的有關(guān)規(guī)定。一. 儀器:分析天平或感量為0.1g天平二. 測(cè)定:任取1包銷(xiāo)售包裝計(jì)的樣品一件,除去包裝,用最少分度值為0.1g的天平,稱(chēng)取凈含量并計(jì)錄。結(jié)果要求:?jiǎn)渭b凈含量負(fù)偏差不得超過(guò)標(biāo)準(zhǔn)規(guī)定要求。第三節(jié) 理化指標(biāo)測(cè)定 理化指村檢測(cè)包括干燥失重和還原糖的測(cè)定一.干燥失重1.糖果經(jīng)干燥后損失的質(zhì)量,以樣品損失質(zhì)量對(duì)樣品原質(zhì)量的質(zhì)量百分比來(lái)表示。2.

13、原理:食品水分指在一定的溫度及減壓的情況下失去物質(zhì)的總量,適用于含糖、味精等易分解的食品。1. 儀器分析天平鋁或稱(chēng)量皿:內(nèi)徑60mm70mm,高35mm以下。真空干燥箱2. 分析步驟4.1試樣的制備:粉末和結(jié)晶試樣直接稱(chēng)?。挥蔡枪?jīng)乳缽粉碎;軟糖果用刀片切碎,混勻備用。4.2測(cè)定:取己恒重的稱(chēng)量瓶準(zhǔn)確稱(chēng)取約210g試樣,放入真空干燥箱內(nèi),將干燥箱連接水泵,抽出干燥箱內(nèi)空氣至所需壓力(一般為4053kPa ),并同時(shí)加熱至所需溫度60±5。關(guān)閉通水泵或真空泵上的活塞,停止抽氣,使干燥箱內(nèi)保持一定的溫度和壓力,經(jīng)4h后,打開(kāi)活塞,使空氣經(jīng)干燥裝置緩緩至干燥箱內(nèi),待壓力恢復(fù)正常 后再打開(kāi)。

14、取出稱(chēng)量瓶,放入干燥器內(nèi)0.5h后稱(chēng)量,并重復(fù)以上操作至恒重。5.結(jié)果計(jì)算 試樣中水分含量按下式計(jì)算: m1-m2 X=-×100% m1-m3式中: X試樣中水分的含量; m1稱(chēng)量瓶和試樣的質(zhì)量,g; m2稱(chēng)量瓶和試樣干燥后的質(zhì)量,g; m3稱(chēng)量瓶的質(zhì)量,g; 計(jì)算結(jié)果保留三位有效數(shù)字。3. 精密度在重復(fù)性條件下獲得的兩次獨(dú)立測(cè)定結(jié)果的絕對(duì)差值不得超過(guò)算術(shù)平均值的10%。三. 還原糖的測(cè)定(高錳酸鉀滴定法)(一)原理 試樣經(jīng)除去蛋白質(zhì)后,其中還原糖把銅鹽還原為氧化亞銅,加硫酸鐵后,氧化亞銅被氧化為銅鹽,以高錳酸鉀溶液滴定氧化作用后生成的亞鐵鹽,根據(jù) 高錳酸鉀消耗量,計(jì)算氧化亞銅含量

15、,再查表得還原糖量。(二)試劑1. 堿性酒石酸銅甲液:稱(chēng)取34.639g硫酸銅(CuSO4.5H2O),加適量水溶解,加0.5ml硫酸,再加水稀釋至500ml,用精制石棉過(guò)濾。2. 堿性酒石酸銅乙液:稱(chēng)取173g酒石酸鉀鈉與50g氫氧化鈉,加適量水溶解,并稀釋至500mL,用精制石棉過(guò)濾,貯存于橡膠塞玻璃瓶?jī)?nèi)。3. 精制石棉:取石棉先用鹽酸(3mol/L)浸泡2d3d,用水先凈,再加氫氧化鈉溶液(400g/L)浸泡時(shí)2d3d,再用熱堿性酒石酸銅乙液浸泡數(shù)小時(shí),用水洗凈。再以鹽酸(3mol/L)浸泡數(shù)小時(shí),以水洗至不呈酸性,然后加水振搖,使成細(xì)微的漿狀軟纖維,用水浸泡并貯存于玻璃瓶中,即可作填充

16、古氏坩堝用。4. 高錳酸鉀標(biāo)準(zhǔn)溶液(0.1000mol/L)。5. 氫氧化鈉溶液(40g/L):稱(chēng)取4g氫氧化鈉,加水溶解并稀釋至100ml。6. 硫酸鐵溶液:稱(chēng)取50g硫酸鐵,加入200ml水溶解后,慢慢加入100ml硫酸,冷卻后加水稀釋至1000ml。7. 鹽酸(3mol/L):量取30ml鹽酸,加水稀釋至120ml。(三)儀器1. 25ml古氏坩堝或G4垂融坩堝2. 真空泵或水泵(四)操作方法1試樣處理1. 1乳類(lèi)、乳制品及含蛋白質(zhì)的冷食類(lèi):稱(chēng)取2.005.00g固體試樣,置于250mL容量瓶中,加水50mL,搖勻后加10mL堿性酒石酸銅甲液及4ml氫氧化鈉溶液(40g/L),加水至刻度

17、,混勻。靜置30min,用干燥濾紙過(guò)濾,棄去初濾液,濾液備用。1.2 含多量淀粉的食品:稱(chēng)取10.0020.00g試樣,置于250mL容量瓶中,加200mL水,在45水浴中加熱1h,并時(shí)時(shí)振搖。冷卻后加水至刻度,混勻,靜置。吸取200ml上清液于另一250ml容量瓶中,以下按1.1自“加10mL堿性酒石酸銅甲液”起依法操作。2. 測(cè)定:吸取50.00ml處理后的試樣溶液,于400ml燒杯內(nèi),加入25ml堿性酒石酸甲液及25ml乙液,于燒杯上蓋一表面皿,加熱,控制在4min內(nèi)沸騰2min,趁熱用鋪好石棉的古氏坩堝或G4垂融坩堝抽濾,并用60熱水洗滌燒杯及沉淀是,至洗液不呈堿性為止,將古氏坩堝或垂

18、融坩堝 放回原400ml燒杯中,加25ml硫酸鐵溶液及25mL水,用玻璃棒攪拌使氧化亞銅完全溶解,以高錳酸鉀標(biāo)準(zhǔn)溶液c(1/5KmnO4=0.1000mol/L)滴定至微紅色為終點(diǎn)。 同時(shí)吸取50ml水,加入與測(cè)定試樣時(shí)相同量的堿性酒石酸銅甲液、乙液、硫酸鐵溶液及水,按同一方法做空白試驗(yàn)。3. 結(jié)果計(jì)算試樣中還原糖質(zhì)量相當(dāng)于氧化亞銅的質(zhì)量,按下式計(jì)算 X=(V-V0)×c×71.54式中: X試樣中還原糖質(zhì)量相當(dāng)于氧化亞銅的質(zhì)量,單位為毫克(mg)V測(cè)定用試樣液消耗高錳酸鉀標(biāo)準(zhǔn)溶液的體積,單位為毫升(ml)V0試劑空白消耗高錳酸鉀標(biāo)準(zhǔn)溶液的體積,單位為毫升(ml)C高錳酸鉀

19、標(biāo)準(zhǔn)溶液的實(shí)際濃度,單位為摩爾每升(mol/L)71.541ml高錳酸鉀標(biāo)準(zhǔn)溶液c(1/5KmnO4=0.1000mol/L)相當(dāng)于氧化亞銅的質(zhì)量,單位為毫克(mg)根據(jù)式中計(jì)算所得氧化亞銅質(zhì)量,查表1,再計(jì)算試樣中還原糖含量,按下式計(jì)算: m1X=-×100m2×V/250×1000式中:X試樣中還原糖的含量,單位為克每百克(g/100g)m1查表得還原糖質(zhì)量,單位為毫克(mg)m2試樣質(zhì)量或體積,單位為克或毫升(g或ml)V測(cè)定用試樣溶液的體積,單位為毫升(ml)250試樣處理后總體積,單位為毫升(ml)計(jì)算結(jié)果保留三位有效數(shù)字。4. 精密度在重復(fù)性條件下獲得
