DongpoporkisafamousChinesedishthatoriginatedfromtheHangzhouregionduringtheSongdynasty.Itisnamedafterthegreatpoet,calligrapher,andstatesmanSuShi,whoisalsoknownasSuDongpo.Thedishismadefromafattycutofporkbellythatisslowlybraisedinamixtureofsoysauce,ricewine,sugar,andspicesuntilthemeatistenderandtheskinbecomesgelatinous.

ThepreparationofDongpoporkrequiresalongcookingtime,buttheendresultiswellworththeeffort.Themeatisslicedandservedwiththeskinfacingupwardtoshowcasetheshiny,amber-coloredglazeontop.Thetendermeatandtherich,savorysauceareaperfectmatchforsteamedrice,andtheuniquetextureoftheporkskinaddsanextradimensionofflavorandtexturetothedish.

TheoriginsofDongpoporkcanbetracedbacktothe11thcentury,whenSuShiwasservingasthegovernorofHangzhou.Oneday,hedecidedtocookapieceofporkbellythathadbeenlayingaroundinhiskitchenforawhile.Hefirstboiledthemeatinwatertoremovesomeofthefat,andthenbraiseditinamixtureofsoysauce,ricewine,andotherseasoningsforseveralhours.TheendresultwassodeliciousthatSuShinamedthedishafterhimselfandbecamefamousforthecreation.

DongpoporkhassincebecomeastapleofHangzhoucuisineandiswidelyenjoyedthroughoutChinaandaroundtheworld.Itisadishthatrequiresacertainlevelofskillandpatiencetoprepare,asthemeatneedstobecookedslowlyandcarefullytoachievetheperfectbalanceoftendernessandflavor.

TomakeDongpoporkathome,youwillneedthefollowingingredients:

-2lbsporkbelly

-1cupsoysauce

-1cupShaoxingwineorotherricewine

-1cupwater

-1/2cupbrownsugar

-2staranise

-1cinnamonstick

-2clovesgarlic,sliced

-2slicesginger

-1greenonion,chopped

Instructions:

1.Cuttheporkbellyinto2-inchpieces,andscoretheskininacrosshatchpattern.

2.Placetheporkinapotandcoverwithwater.Bringtoaboilandcookfor10minutestoremovesomeofthefat.Drainanddiscardthewater.

3.Inthesamepot,combinethesoysauce,Shaoxingwine,water,brownsugar,staranise,cinnamonstick,garlic,andginger.Stirtocombine.

4.Addtheporktothepotandbringtoaboilovermediumheat.Reduceheattolowandsimmerfor2hours,untiltheporkistenderandtheskinisgelatinous.

5.Removetheporkfromthepotandplaceinaservingdish,skinsideup.

6.Strainthesaucethroughafine-meshsieveandpouroverthepork.

7.Garnishwithchoppedgreenonionandservewithsteamedrice.
