1、生工食品學(xué)院創(chuàng)優(yōu)秀博士學(xué)位論文資助申請表申請人姓名余挺學(xué)科、專業(yè)食品科學(xué)與工程導(dǎo)師姓名鄭曉冬申請理由（博士學(xué)位論文的選題、前期工作、依靠的科研項目等方面）：據(jù)統(tǒng)計目前發(fā)達國家果實采后損失仍高達20-30%，在發(fā)展中國家其損失更為嚴重。由真菌引起的果實采后的腐爛變質(zhì)是導(dǎo)致其大量損失的主要原因之一。長期以來防治果實采后腐爛的主要方法依賴于高效的化學(xué)殺菌劑（農(nóng)藥）的研制和使用。鑒于國內(nèi)外對環(huán)境和食品安全的日益重視及化學(xué)殺菌劑（農(nóng)藥）的對健康和環(huán)境的（潛在）危害，研究并開發(fā)替代化學(xué)殺菌劑的方法具有重大的社會意義經(jīng)濟價值。利用拮抗酵母開展采后果實的生物防治是目前國際上研究熱點之一。但即使是已經(jīng)商業(yè)化生產(chǎn)

2、的Candida oleophila（商品名為ASPIRE）也只有在與低劑量殺菌劑同時使用才能達到足夠有效的防護作用，而且它們一般都不能有效的控制處于潛伏狀態(tài)的病原菌，即僅具有保護效果而缺乏治療能力，并且對病原菌拮抗的穩(wěn)定性和廣普性上與化學(xué)殺菌劑相比也還有很大的差距。此外，拮抗酵母需要較高濃度下才能有效的作用的特點也將產(chǎn)生很大的經(jīng)濟成本壓力。這些因素都給其商業(yè)化帶來了諸多限制。因此拮抗酵母生物防治的效力必須要進一步的得到提高和改進。明確機理是開展提高拮抗酵母的生物防治效力的前提。一般認為拮抗酵母可能與營養(yǎng)和空間競爭、分泌幾丁質(zhì)酶等水解酶抑制病原菌和通過誘導(dǎo)果實抗性間接提高果實對病原菌的抵抗能力

3、。但其確切的機理國內(nèi)外尚沒有定論。這主要是因為在該領(lǐng)域開展相關(guān)機理研究還非常少，而且也缺少有效的研究果實、生防菌和病原菌復(fù)雜相互作用的方法和手段。 本研究從植物病理和生理、拮抗酵母機理出發(fā)，以國際普遍采用的實驗方法，通過體外、體內(nèi)多種試驗設(shè)計，研究提高酵母拮抗效力的途徑，并通過分析果實、病原菌、生防菌之間的相互作用探討進一步分析、探索其機理，具有較高的實用價值、理論意義和創(chuàng)新性。本研究是國家自然科學(xué)基金項目（30571301）、國家教育部博士點基金資助項目（20040335025）和浙江省科技廳重點項目研究的一部分。 目前研究工作進展順利。到部分研究結(jié)果已整理投寄國際SCI刊物5篇, 截止到2
